Juan Pablo, JP, Escobar is the Wine Director at Babbo Ristorante e Enoteca, the renowned Italian restaurant in the heart of Greenwich Village neighborhood in NYC. Born in Santiago de Chile, Juan Pablo began his wine journey after arriving in Princeton, New Jersey at the age of sixteen. Working with the Terra Momo group, he had the opportunity to learn every front-of-house position while studying the world of viticulture and immersing himself in Italian wine and culture. He started at Babbo Ristorante e Enoteca in 2015, becoming the Wine Director in 2019. His extensive wine list today spans from the old Italian classics, over an impressive selection of Grower Champagne and new low-intervention wines.
In this episode JP talks about his experiences as the Wine Director. He talks about the perks and challenges, but also his thoughts on what makes a good wine, a good wine list and shares his passion.
