Aaron Sedrick Rawlins left home in the U.S. at 18 to be a chef in Paris. His path has cleary held many twists and turns that took him to the mountains of Armenia to make wine. He started the project on his own and since getting married in 2020 now works alongside his wife, Maral. The vineyards are situated around the village of Aghavnadzor in Vayots Dzor province. Vayots Dzor is in the southeastern end of Armenia, a sparsely populated area that focuses on wine production, mineral water, and cattle-farming. It is the home of the Areni-1 winery, the oldest discovered winery in the Areni-1 cave complex (6,100 years old!). The vines are ungrafted and average around 150 years old. The vineyards are all volcanic soil and range in elevation from 1400m-1600m. Aaron only works with local varieties. Head trained spur pruned vines. The vineyards are dry farmed, there is no tillage and no mowing. Pruning and some canopy management to mitigate disease where applicable. Organic treatments are used when necessary, once or twice a year, if so. Transitioning the vineyards to this farming style has varied depending on each site, some were abandoned and some were conventionally farmed before Tarllc took over. Fermentation and aging takes place in fiberglass tanks. The wines are unfined, unfiltered, and have no added sulfur.
