Hard facts

Permaculture
Native yeast

Carignan was whole cluster and left in bottom of fermenter for carbonic maceration. We then pressed the Barbera and floated that juice on top of the Carignan to create a lack of oxygen and to have two separate fermentation styles happening simultaneously. The result is an incredibly bright and super fresh easy drinking light glou-glou style red wine. Music Pairing: Shakedown Street – Poolside
