Spontaneous fermentation and malolactic take place in 2,500L wooden barrels. Each variety is fermented separately, then blended after all fermentations are done.

A textural, non-aromatic, white wine from Styria in south-eastern Austria. The wine is a blend of three varieties, two being lesser known hybrid grape varieties: Bronner and Souvignier Gris. Hybrid grapes are remarkable as they allow a sustainable viticulture that accomodates better to the climate change and hard conditions, without requiring heavy treatments of the plants.
The structure, texture and richness of the wine comes partly because of a short skin fermentation. The wine has body, richness and acidity, while still being a light wine low in alcohol and totally dry. It will then pair really well with rich fish dishes or even white meats, or any appetizers. Can also be a very good option for crudos.

The color here is a yellow gold. The nose is full, spicy and grassy, with apple and pear fruit. The palate has zingy flavors of lemon and yellow cherry, with a semi-smoky finish. High acidity and a slight tannic structure.

Ploder-Rosenberg is a family estate , located in Vulkanland Steiermark . It spans over 11 hectares (27 acres) of vineyards . With Manuel Ploder , the winery is now in its third generation , but the real pivot happened in 2005 when the family converted to biodynamic farming and started to focus on PiWi (fungus resistant) varieties . Today , 70 to 75 percent of their vineyards are planted with PiWis , with Souvignier Gris being the primary grape . With Manuel’s takeover in 2011 , the winery took the next step in its development .
